Pokemon will increase their EVs as they battle other Pokemon. After a battle, a Pokemon will increase its EV depending on the opponent that it defeated - each Pokemon species has a stat that it'll give effort points to once it's been beaten in battle. If the Pokemon is given vitamins, feathers, or power bracelets, their EVs will increase even faster. Whether the player has regret how they EV trained their Pokemon or just wants to reset a Pokemon back to zero after using it to win too many random encounters, resetting EVs is a crucial part of Pokemon training.

In Pokemon Scarlet & Violet, there is only one way to reset a Pokemon's EVs and that's by giving it specific berries that will reduce the number of Effort Points it's got in a stat. Here are all the EV resetting berries and how much they'll remove:

Where To Find EV Resetting Berries

These berries can be found as hidden items in the wild, but this is completely up to chance. Players can buy EV resetting berries in bulk by visiting Porto Marinada's Market. The Porto Marinada Market is right in the middle of the location; it's the largest building in this town, and it's made of glass. Here is where auctions take place, however, they're only unlocked after the player has beaten Kofu and earned the Cascarrafa Gym Badge.

The items that appear for sale in the auctions are random, but there are a series of merchants that the player can interact with, and each of them has a chance of selling these berries. The merchants will sell them in bulk at a great price so it's definitely worth checking the market from time to time.

Each in-game day that goes by, their stock will change, and they'll be selling something different. Those that aren't fond of waiting, can simply save the game and then add 72 minutes to their console's internal clock so that a new day will start in Pokemon Scarlet & Violet.
